This recipes features Fifty Shades of Green from the avocado flesh and oil to the cress, the arugula and more. Enjoy the tangy apple cider vinegar dressing and smooth avocado oil.

Ingredients

  • 4 cups Fresh arugula leaves
  • 2 cups Fresh WATERCRESS leaves
  • 1 cup PARSLEY leaves
  • 1 Tbsp Grainy Dijon mustard
  • 1 Tbsp APPLE CIDER VINEGAR
  • 5 Tbsp AVOCADO oil
  • 1 AVOCADO, sliced thin
  • 4 Fresh FIGS, chopped
  • 2 cloves Minced garlic
  • 1 tsp Unrefined sea salt and
  • black pepper (each)
  • 4 Scallions, trimmed
  • and chopped thin

Instructions

    1. Wash, drain and dry all greens.
    2. Place in decorative serving bowl.
    3. Arrange fig and avocado on top.
    4. Make dressing by combining mustard, apple cider vinegar, avocado oil,
    garlic, salt and pepper, in large Mason jar. Shake well.
    5. Pour over salad or serve on the side.
    6. Use scallions as garnish.
    7. Boost protein power by sprinkling with 1⁄2 cup hemp seeds.
