Apple Walnut Sweet Potato Muffins
Ingredients

- ½ cup melted coconut oil or EVOO
- ½ cup coconut sugar
- 3 flax eggs
- 1 cup mashed sweet potato
- 1 cup unsweetened applesauce
- 1 medium apple, cored and grated
- ¼ cup maple syrup
- 1 tsp vanilla extract
- ½ cup almond milk
- ¾ cup chopped raw, unsalted walnuts
- 1 ½ cups quinoa flour
- 1 cup brown rice flour
- ½ cup gluten free rolled oats
- 2 tsp baking powder
- 1 tsp salt
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
Instructions
- Preheat oven to 350°F. Line a muffin tin with 12 paper liners.
- Whisk together the coconut oil, coconut sugar, flax eggs, sweet potato, applesauce, apple, maple syrup, vanilla, almond milk and chopped walnuts .
- In another bowl, whisk together the quinoa flour, brown rice flour, rolled oats, salt, baking powder, cinnamon, nutmeg until thoroughly combined. Using a wooden spoon, slowly stir in the flour mixture to the wet mixture until just combined
- Divide the batter evenly between the 12 muffin cups
- Bake the muffins for approximately 25-30 minutes, or until a wooden toothpick inserted in the middle comes out clean. Remove the muffins from the oven and from the muffin tin, and let cool on a wire rack.
