Apple Walnut Sweet Potato Muffins

Ingredients

  • Ingredients:
  • ½ cup melted coconut oil or EVOO
  • ½ cup coconut sugar
  • 3 flax eggs
  • 1 cup mashed sweet potato
  • 1 cup unsweetened applesauce
  • 1 medium apple, cored and grated
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • ½ cup almond milk
  • ¾ cup chopped raw, unsalted walnuts
  • 1 ½ cups quinoa flour
  • 1 cup brown rice flour
  • ½ cup gluten free rolled oats
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg

Instructions

  1. Preheat oven to 350°F. Line a muffin tin with 12 paper liners.
  2. Whisk together the coconut oil, coconut sugar, flax eggs, sweet potato, applesauce, apple, maple syrup, vanilla, almond milk and chopped walnuts .
  3. In another bowl, whisk together the quinoa flour, brown rice flour, rolled oats, salt, baking powder, cinnamon, nutmeg until thoroughly combined. Using a wooden spoon, slowly stir in the flour mixture to the wet mixture until just combined
  4. Divide the batter evenly between the 12 muffin cups
  5. Bake the muffins for approximately 25-30 minutes, or until a wooden toothpick inserted in the middle comes out clean. Remove the muffins from the oven and from the muffin tin, and let cool on a wire rack.
