Green Tea Almond Biscotti
Biscotti are my favorite treat to have with tea or coffee. I just love the dense, crunchiness they offer. It's nice to know this recipes delivers some nutrition while enjoying the sweet taste.
Ingredients
- 1 cup Almond meal
- 1 cup TIGER NUT flour
- 1/3 cup GREEN TEA, brewed for 5 minutes and cooled
- 2 tsp Baking powder
- 4 Tbsp COCONUT OIL
- 2 Whole eggs + 1 white
- 1 tsp Best quality vanilla extract
- 1/4 cup Finely chopped almonds
- 1/4 cup Finely chopped pitted dates
Instructions
- Preheat oven to 350˚F.
- In a mixing bowl, combine almond meal, tiger nut flour and baking powder.
- Stir to mix well.
- Use a pastry cutter to cut in the coconut oil until the mixture has the texture of coarse oatmeal.
- Stir in eggs, green tea and vanilla extract.
- Fold in almonds and dates.
- Turn the dough onto a lightly floured surface and shape into two 9” x 2” logs.
- Line a baking sheet with parchment paper. Place the logs on the sheet. Allow 4 inches of space in between each log for spreading.
- Bake 25 minutes or until lightly browned. Cool the logs at room temperature for 10 minutes.
- Using a serrated knife, slice the logs diagonally into ½" thick slices.
- Place the slices on an ungreased baking sheet in a single layer, cut side down.
- Bake for an additional 18 to 20 minutes, or until dry and crisp, turning the slices over after ten minutes. Let cool completely. Serve or store.
