Kelp Pad Thai
This no cook recipe for Pad Thai will quickly become a favorite in your
kitchen. No cooking required!
Ingredients
- 1 package KELP noodles
- 1 head Shredded radicchio
- 1 large Carrot, peeled and julienned
- 1 Zucchini, julienned
- 1 cup Cauliflower florets
- 1 bunch Scallions trimmed and chopped
- 1 cup Bean sprouts
- 1⁄2 cup Fresh cilantro, coarsely chopped
- 1⁄2 cup Raw, unsalted cashews for garnish
- Ingredients for Pad Thai Sauce:
- 1⁄4 cup Raw almond butter
- 1⁄4 cup TAHINI
- 3 Tbsp Low sodium tamari (Bragg Liquid Aminos are great)
- 3 Tbsp MANUKA HONEY
- 1 tsp Each garlic and ginger, minced
- 1 tsp Each unrefined sea salt and black pepper
- Juice of 1 lime, squeezed
Instructions
1. Place Pad Thai Sauce ingredients in a high powered blender or Vitamix and process until smooth. Set aside.
2. In large serving bowl, combine kelp noodles and vegetables. Use clean hands to toss ingredients.
3. Add half of dressing and toss. Add more dressing if desired and toss again. Divide amongst 4 bowls and garnish with cashews and additional cilantro.
